Traditional Dairy Practices Boost Heritage And Income In Northern Borders
The Northern Borders Region of Saudi Arabia is witnessing the continuation of a centuries-old tradition in dairy production, focusing on "jameed" and "khathir," fermented dairy products known for their unique preparation methods and cultural significance. This traditional practice not only preserves a significant aspect of the region's heritage but also contributes to the local economy by providing families with an additional source of income.
In an enlightening discussion with the Saudi Press Agency (SPA), Zohya Al-Dahmashi delved into the intricate process of creating these dairy products. Jameed, known regionally as "iqatt" or "mudayir," involves a meticulous process where butter is separated from yogurt in a leather bag. The remaining buttermilk is then boiled down until it thickens, salted, shaped into balls, and sun-dried for preservation. On the other hand, khathir, also referred to as "roob" or "zabadi," is produced by boiling milk until a layer forms on top. After cooling, a small amount of pre-prepared khathir is added to act as a starter culture. The mixture is then kept warm to ferment and thicken, resulting in the final product that is stored in cool, dry conditions.

Arar, a city in the Northern Borders Region, stands out as a hub for this thriving traditional dairy industry. Families engaged in this cottage industry, along with craftswomen, actively participate in various activities and events organized by government and civil entities. These platforms allow them to showcase traditional products, old handicrafts, and popular dishes, thereby opening new avenues to enhance their income.
