Starting with the Sweet and Sour Beetroot Carpaccio, it is a deceivingly modest dish-cut to well-balanced perfection, like a well-conducted symphony that knits everything into harmony. Thin cuts of beetroot play against caramelized walnuts, delicate buffalo ricotta, and an undertone of green apple, all layered with peppery rocket. This is a dish of whispers rather than shouts, and yet somehow each mouthful is memorable, a love letter to ingredient-driven Italian cuisine.

The primi section is where restraint meets opulence. You might be torn between the Basil Risotto with Burrata and Tortelli Cacio e Pepe with Artichokes. But don't sleep on the Homemade Agnolotti del Plin, a cloud-like pasta stuffed with pumpkin and sage, crowned with aged Parmigiano and Bronte pistachios. It is creamy, earthy, and thoroughly Italian in its unapologetic indulgence with every single bite.

Of course, we had to request additional chili on the side to give the risotto that spicy kick ourselves-perhaps that's a Dubai habit. The Tortelli did, however, arrive a tad shy of scorching. A bit more heat might have coaxed that luscious cheese ooze we craved, but, in all fairness, the flavors held their own.

Secondi & Pizzas

Though the secondi often tend toward "meat and vegetable" classics, the Pan-Fried Lamb Striploin surprises. When a dish hits Dubai with a description as uninviting as "lamb with artichokes and mint yogurt," one's expectations run about as tepid as winter does in the UAE. But The Artisan elevates this lamb plate with precision and poise. Tender, well-sized for sharing, and delicate enough to defy its hearty description, it's the surprise hit you didn't see coming.

If, like us, you need a palate cleanser from lamb land, the pizza lineup here is an absolute must. The Burrata Pizza is a canvas of pillowy mozzarella, fresh tomatoes, and a creamy burrata all resting on a crust that's somehow both crisp and airy. This is pizza that does not need topping to impress, with the dough so perfectly made it would probably pass muster on its own. Meanwhile, for those who want a little excitement in life, the spicy kick of Salame Piccante hits just the right balance, which in harmony with pecorino and parsley dances to a really unforgettable spicy tune.

Desserts: Profiteroles and a Sigh for Tarte Tatin

And this is where The Artisan sends you off with a mouth-watering, if somewhat unimaginative, final course. The profiteroles are textbook Italian heaven: custard-filled pastry drenched in dark chocolate. The Albicocca is chocolate mousse combined with apricot compote and sorbet for the perfect mix of citrusy and chocolatey notes. Each was expertly done, but we couldn't help but wish for something more adventurous, like a Tarte Tatin or some creative take on panna cotta. There's a feeling that dessert, as wonderful as it is, doesn't quite rise to the imaginative heights of everything else on the menu.

Ambiance & Service

If one would imagine, the luxurious palette of the Waldorf Astoria overpowered the coziness of The Artisan; in fact, quite the opposite happens. Tucked into an oblong space with the familiar feel of an Italian art deco lounge, the decor harmonizes with the hotel's signature shades of brass, green, and marble. Attentive but not intrusive, the staff brings a touch of Italian warmth that makes each visit as personal as the one before.

There's something quietly confident about this place. Where some Dubai spaces are more about flash, The Artisan is confident in its core ingredients and the culinary technique on offer to do the talking. And it does. Each time I visit, it feels like a 'home run' every time, with flavors, textures, and setting all clicking into place to leave you satisfied but wanting your next meal here.

Dubai's Italian Standard-Bearer

Yes, The Artisan may not update its menu as regularly as some others, and it is true that one or two regulars will yearn for more variety. Yet The Artisan has absolutely nothing to prove. Its dishes are refined, the service warm, the ambience effortlessly chic. One of those rare Dubai gems that's not obliged by a need to reinvent itself every few months because, well, it doesn't have to.
