Revolver — A Unique South Asian Dining Experience Launches Today In Dubai
Singapore's Culinary Arts Group has ventured into Dubai, unveiling Revolver, a dining concept that marries the intensity of high-energy dining with the nuances of South Asian cuisine. Set to open its doors today on March 3, Revolver is located in The Opus by Dame Zaha Hadid in Business Bay, adding a new dimension to Dubai's culinary scene.
This open-fire grill, previously celebrated with a Michelin Select in Singapore, pioneers a bold approach by fusing traditional flavours with contemporary innovation. Positioned to make its mark on Dubai's vibrant food scene, Revolver aims to offer diners an unforgettable culinary journey.

Leading the culinary team at Revolver is Chef Jitin Joshi, whose illustrious career spans 27 years, including a significant tenure as the Executive Chef at London's now two-Michelin-starred Gymkhana. His expertise in combining French culinary techniques with Indian flavours positions him uniquely to helm Revolver's kitchen.
Chef Jitin is celebrated for his innovative approach, having had the privilege to cook for international icons such as David Beckham, Ed Sheeran, and Mick Jagger, as well as dignitaries including Bill Clinton and King Charles. "I am thrilled to bring my passion, creativity, and precision to Revolver, reimagining culinary traditions to deliver a truly disruptive dining experience," stated Chef Jitin.
Revolver's dining experience is akin to a theatrical performance, with an open wood-fired grill and tandoor at its heart, offering guests a live spectacle of culinary artistry. The restaurant's design ensures that every diner gets a front-row seat to the action, enhancing the immersive experience. Additionally, an outdoor terrace provides an inviting space for al fresco dining amidst lush greenery, further elevating the ambiance.
The menu at Revolver is a celebration of South Asia's culinary diversity, showcasing dishes that highlight world-class ingredients through innovative cooking techniques. Central to the menu is the artful use of charcoal grills, braziers, and tandoors. Signature dishes include the Smoked Chutoro Tartare, inspired by Northern India, and the Lobster Manchurian, a nod to Tangra, Kolkata's unique culinary landscape.
Complementing the culinary offerings, Revolver's beverage programme is an ode to the elements of nature, featuring cocktails inspired by fire, water, and light, among others. Each drink is a blend of bold ingredients and innovative techniques, designed to match the intense flavours of the menu. Highlights include "Unlighted," featuring Don Julio Reposado and Talisker Storm, and "Drift," a gin-based concoction finished with champagne.
For Martini lovers, Beverage Director Vitor Lourenço has curated a selection of eight different martini styles, presented with a flourish on a bespoke tray. This attention to detail extends to Revolver's ice program, where custom techniques and tools enhance the visual and sensory appeal of each beverage.
Revolver also offers "Vol. ZERO.1," a non-alcoholic beverage experience that mirrors the restaurant's dedication to flavour and innovation. Drinks such as "Crystali-No" and "Lalli" offer guests complex, alcohol-free options crafted with the same care as their spirited counterparts.
The restaurant boasts a Private Dining Room, an epitome of luxury and exclusivity. Accommodating up to 12 guests, the room features a striking green marble table and access to an outdoor terrace for larger gatherings — perfect for private events, offering bespoke menus, wine pairings, and the option of live entertainment.
