Unique Navratri-Special Recipe: Delicious Sabudana Momos

Ingredients:
For the dough:
- 1 cup sabudana (soaked overnight)
- 1/2 cup water chestnut flour singhare ka atta or buckwheat flour kuttu ka atta 1 tbs ghee Salt to taste sendha namak for fasting Filling: 2 medium boiled potatoes, mashed 1/4 cup roasted peanuts coarsely ground 1 tbs green chilies finely chopped 1 tbs fresh coriander chopped 1/2 tsp cumin seeds 1/2 tsp black pepper powder 1 tsp lemon juice Salt to taste sendha namak for fasting 1 tbs ghee or oil to temper Instructions: Dough Preparation:
- Soaking the Sabudana: Wash the sabudana with water. Then soak the sabudana in water overnight. Just take enough water to soak the sabudana. By then it would have absorbed all the water and become soft.
To make the dough, drain the soaked sabudana and put it in a big mixing bowl. Add water chestnut flour or buckwheat flour, ghee, and a pinch of sendha namak. Mix and knead into a soft dough. If required, sprinkle some extra flour to help bind the dough.
Let the Dough Rest: Cover it with a wet cloth and let it rest for 10-15 minutes.

Prepare the Filling:
- Filling: In a bowl, mix together mashed potatoes, ground peanuts, green chilies, coriander, black pepper, and sendha namak. For the tempering: In a small pan, heat 1 table spoon ghee or oil. Add cumin seeds and let them crackle. Pour this tempering over the potato mixture and mix well. Lastly, add lemon juice over it and adjust the seasonings according to taste. Momos Assembling:
- Shape the Momos: Divide the dough into small balls; the size should just be about that of a lemon. Roll each ball gently into a circle using a rolling pin. Be gentle, it might tear easily. Use some extra flour to prevent sticking.

- Fill the Momos: Place a spoonful of the potato mixture in the center of the rolled dough. Gently fold the edges over the filling to form a momo shape, pinching the edges together to seal.
- Steam the Momos: Lightly oil a banana leaf or parchment paper to avoid sticking and place it in the steamer. Put the momos in a steamer and steam them for 10-12 minutes, until they get semi-transparent and firm.

Serving:
Serve hot momos steamed with green chutney made with coriander and mint or a yogurt-based dip. These momos become an ultimate fare for those who fast, with a perfect combination of textures and flavors.
