KIGO Now Open At Four Seasons Hotel Dubai Featuring Authentic Japanese Cuisine

KIGO, nestled within the Four Seasons Hotel Dubai International Financial Centre, has officially begun welcoming guests, introducing them to an authentic Japanese dining experience.

The venture is a collaboration between Fundamental Hospitality and Chef Izu Ani, alongside Head Chef Akinori 'Aki' Tanigawa and Sushi Head Chef Daihachiro Ebata. This establishment aims to captivate guests with its omakase and kaiseki menus, which pay homage to Japan's rich dining traditions by highlighting seasonal ingredients at their peak.

KIGO Now Welcomes Guests at Four Seasons Dubai

At the heart of KIGO’s philosophy lies the celebration of the transient beauty of nature, a concept deeply embedded in Japanese culture. The restaurant's name itself, derived from the seasonal words used in haiku poetry, sets the tone for an experience where each dish serves as a reflection of nature's ephemeral beauty. This alignment with nature's cycles invites diners to experience flavors at their utmost purity and excellence, mirroring the brief yet profound beauty of phenomena such as cherry blossom falls or the melting of snow.

Leading the kitchen's talented team is Dubai’s renowned Chef Izu Ani, alongside Head Chef Akinori "Aki" Tanigawa, who brings over thirty years of kaiseki expertise to the table. Their skills are complemented by Sushi Head Chef Daihachiro Ebata, whose precision has been honed at the Michelin-starred Sushi Wakon in Kyoto.

Chef Aki encapsulates the essence of KIGO's culinary philosophy, emphasizing the importance of happiness and emotional fulfilment in cooking. For him, preparing food is akin to presenting a gift, combining ingredients with sincerity to bring joy.

This perspective is reflective of his journey from culinary obligation to passion, driven by the impact of his dishes on others. He sees KIGO as a bridge to sharing the traditions and artistry of Japanese cuisine with a broader audience, aiming to preserve its timeless traditions while introducing them to new generations.

KIGO's menus are a homage to the Japanese reverence for seasonality and simplicity, offering a kaiseki journey that embodies the essence of Japanese dining. This tradition, dating back centuries, represents a balance of taste, texture, appearance, and colour, evolving from a simple meal for monks into a sophisticated multi-course experience.

For those seeking a unique dining experience, KIGO offers a private room ideal for intimate kaiseki or sushi omakase gatherings. Here, guests can enjoy a set menu that encapsulates the luxurious essence of Japanese culture, tailored for moments that demand a blend of privacy and exclusivity.

The dining space at KIGO, designed to accommodate 44 guests, radiates the Japanese philosophy of Wa, emphasizing harmony. Central to the restaurant’s design is a sushi counter crafted from Aji stone, a material known for its durability, sourced from Kagawa Prefecture.

The space is further adorned with Rimpa-inspired artwork by Eiki Kimura and ikebana flower arrangements, which reflect the restaurant’s core philosophy of appreciating beauty in transience. These elements, coupled with chinaware and glassware meticulously selected from Japan, enhance the authenticity of the dining experience.

The culinary offerings at KIGO are a celebration of the changing seasons, with the autumn menu narrating a transition from summer's warmth to autumn's crisp beginnings. Dishes evolve from highlighting summer ingredients to featuring autumn harvests, encapsulating the impermanence central to Japanese culture.

The beverage selection, including rare sakes and seasonally inspired cocktails, complements the dining experience, with each drink accompanied by a poetic story that deepens the seasonal immersion.

Chef Akinori 'Aki' Tanigawa stated, "We are beyond excited to welcome guests to one-of-a-kind omakase and kaiseki experiences at KIGO. I have always been inspired by the subtlety and artistry of Japanese cuisine, and it is an honour for the team and me to get to recreate this through a modern lens, shaped by intention, seasonality, and tradition."
