Straight from Eastern Europe, John Dory is introducing Dubai to its first-ever holistic seafood ecosystem, housed within The Market Island at Dubai Festival City Mall. This innovative concept covers all aspects of the seafood journey, focussing direct sourcing, on-site processing, and unique cooking methods. The venue is set for grand unveiling on July 25.
The UAE's seafood industry, valued at $2.66 billion in 2025, is on a trajectory to grow by 5.78% annually until 2030, surpassing growth rates of many other food segments. The debut of John Dory Seafood Market aligns perfectly with the increasing demand for seafood in the UAE, promising a novel way to enjoy these delicacies.

At the heart of John Dory's operations is the deep respect and meticulous care for seafood, driven by the founders Arseni Tsiutsiunnik and Eugene Halavach. Since its inception in 2013, the company has evolved from a modest garage setup to a major player poised to revolutionise Dubai's seafood dining landscape. Their approach prioritizes traceability and craftsmanship, ensuring fish is sourced directly from reputable fisheries and farms around the world, including the Netherlands, France, and the Seychelles, without any middlemen.
"We're not just launching a restaurant — we're building a seafood ecosystem. We believe the true taste of seafood begins at the source— with the origin of the fish and every step that follows. For instance, we carefully selected a tuna supplier from the Seychelles, known for pristine waters and premium tuna exported to Europe and Japan. Our sea bass and sea bream come exclusively from Greece, and our oyster bar features French oysters chosen through blind tastings," stated Arseni Tsiutsiunnik, CEO and co-founder of John Dory.
John Dory Seafood Market isn't just about dining; it's an ambitious project that marries retail and street food with the dining experience, thus creating a three-fold consumer engagement. The Seafood Bar offers a laid-back dining atmosphere where dishes are prepared with an open-fire grill, infusing them with robust, authentic flavors.
The Retail Store allows customers to take the fresh catch home, offering everything from smoked fish to ready-to-cook delicacies. Meanwhile, the Street Food section serves quick, delicious bites inspired by international cuisines, perfect for on-the-go eating.
John Dory's commitment to sustainability is evident in its head-to-tail philosophy, which ensures zero waste by utilizing every part of the fish. This approach is supported by advanced technology such as custom-built smokers and dry-aging apparatus, alongside a seamless supply chain. This collaboration between fishmongers and chefs not only enhances flavours, but also significantly reduces waste, transforming every fish element into a variety of culinary creations.
"Everything we serve is crafted in-house, from fresh fillets to dry-aged cuts and smoked pâtés. Our dedicated craft zone allows us full control over flavour and quality," shared Maxim Gurin, the Head Chef, who comes with over a decade years of culinary experience.
