Hanbok: A New Korean Fine Dining Experience In Abu Dhabi Redefining Culinary Elegance
Before diners arrive and the ambience is set, Hanbok embodies a sense of culture and elegance. This upcoming Korean dining venue on Abu Dhabi's Galleria Al Maryah Island aims to redefine the local culinary scene, not just join it. Hanbok, named after Korea's traditional clothing, represents a broader world of beauty and tradition that transcends its original meaning.
The interiors of Hanbok, designed by DBM Studio, echo a modern narrative of Korean heritage. Vertical layers of delicate fabric mimic the graceful movement of a hanbok skirt. Light softly dances across these layers, making the space seem alive, much like couture in motion. The environment is immersive and cinematic, creating a unique dining experience.

Yoann Grillet, Founder & CEO of Fuse Holding, envisions Hanbok as a place where tradition and modernity coexist. "Hanbok was imagined as a sanctuary where the past and present meet in quiet conversation," Grillet explains. "A place where heritage doesn't merely decorate the room but breathes through every detail. We want guests to feel embraced - to experience Korean culture in a way that is poetic, sincere, and deeply human."
The restaurant's culinary philosophy reflects this dialogue between eras. Korean flavours are reimagined with modern techniques, creating a balance of boldness and subtlety. Each dish is an artful blend of fire and softness, memory and innovation, offering a modern take on traditional Korean cuisine that appeals to both the subtle and the spectacular.
Hanbok's layout guides guests on a journey akin to a curated exhibit. The experience begins at a sculpted bar, leading to a mystical corridor bathed in soft light. The open kitchen showcases the craft behind the cuisine, and the dining area, adorned with a grand floral chandelier and textile installation, blurs the line between art and atmosphere.
Fuse Holding, known for innovative dining concepts like Kiyoshi in Dubai, has created Hanbok as a tribute to culture and artistry. This project feels especially personal, a blend of history and modern desire. Hanbok aims to be more than just a restaurant; it's set to become a cultural landmark in Abu Dhabi, embodying refinement and resonating deeply with its patrons.
As Hanbok prepares to welcome its first guests, its story unfolds through silk, light, and flavour. In a city that values ambition and beauty, Hanbok is poised to make its mark as a sophisticated and culturally rich dining destination. Its essence, interwoven with elegance and human touch, promises to captivate and inspire.
