Delhi To Dubai: How Chef Arif Is Leading Little Miss India To Award-Winning Heights

In a city that constantly reinvents its culinary identity, Indian cuisine has found a prominent place in Dubai's dining narrative. Yet among the many restaurants vying for attention, Little Miss India distinguishes itself through authenticity. Dedicated to the royal traditions of Awadhi cuisine, it avoids the distractions of fusion, presenting dishes that are as soul-stirring and authentic.

From the moment guests arrive, the theatrics begin. Hindi melodies set the tone, while the restaurant — designed as an opulent mansion — unfolds its interesting backstory. As the tale goes, the mansion was a royal gift from a king to his cherished daughter, Rashmi Singh. Elegant and petite, she became fondly known as Little Miss India.

Guiding this vision from the kitchen is Executive Chef Mohammad Arif, whose mastery in the Indian flavors anchors the restaurant's reputation. With years of experience shaping menus that respect tradition while embracing innovation, Chef Arif infuses every plate with authenticity, craftsmanship, and balance. His signature dishes include Murg Gola Kebab, Bhutiyan De Kebab, and Bhatti Da Smoked Lamb Chops, something that I can personally vouch for.

Recognised by the Michelin Guide for four consecutive years, Chef Mohammad Arif stands out among Dubai's elite Indian chefs. As the Restaurant Executive Chef of Little Miss India at Fairmont The Palm, he brings over 22 years of international expertise to the forefront, crafting menus that honor India's rich culinary heritage while captivating the city's cosmopolitan diners.

Chef Arif's culinary journey began in New Delhi, forged in the kitchens of renowned hotels and restaurants, before seeing him rise through luxury hospitality roles with brands. Each stop refined his skills and broadened his vision, culminating in a leadership role that has shaped outstanding dining experiences across the GCC.

Joining Fairmont The Palm in 2017, Chef Arif led the pre-opening of Little Miss India. Under his guidance, Little Miss India has garnered impressive awards, including the Hospitality Gold Award for Best Restaurant of the Year (2024), Watson Award for Highly Commended Indian Restaurant of the Year (2024), and consistent recognition from the Michelin Guide from 2022 to 2025.

In this interview with OneArabia, he narrates his vision and passion for food and the influences that shaped him.

How has your upbringing and training in New Delhi influenced your culinary style?

Growing up in New Delhi exposed me to the city's fusion of street food and regal Mughlai cuisine. I learned early to appreciate authentic recipes, regional variety, and the power of food to bring people together. Professional training honed these instincts, enabling me to craft dining experiences that tell a story and celebrate Indian diversity.

What inspires your blend of tradition and innovation, especially for occasions like Diwali?

Diwali celebrates tradition and togetherness, and food is central to those moments. I integrate classic Indian flavors with contemporary techniques to salute our culinary heritage, presented in new and exciting ways.

What sets your culinary style apart in Dubai's competitive scene?

Michelin Guide recognition is a mark of consistency and creativity. My style is defined by blending genuine Indian flavors with modern culinary approaches, resulting in dishes that honor tradition yet appeal globally. Every element—from balance and presentation to storytelling—aims to create an unforgettable dining experience.

What is your vision for Little Miss India's future?

My vision is to deliver an authentic Indian journey, celebrating our cuisine's richness and diversity. I plan to evolve our menu with seasonal and festive offerings, maintain our commitment to quality, and design memorable experiences that reflect India's cultural soul.

If you could serve your signature Murg Gola Kebab to any iconic figure, who would it be?

Every guest who enjoys my food is special; the true reward lies in serving those who value the craft, rather than celebrity.

If one dish could represent your culinary journey, what would it be?

A modern Indian seafood curry blending coastal flavors with refined techniques and elegant plating would best encapsulate my diverse experience.

What new experiences can guests expect at Little Miss India?

Look forward to immersive dining concepts—from seasonal menus to bold reinterpretations of regional classics. My aim is to keep the restaurant dynamic, always honoring Indian authenticity.

What is your personal favorite world cuisine, and why?

Japanese cuisine is my ultimate favorite for its simplicity, harmony, and appreciation for natural flavors—principles that resonate closely with my own philosophy.

Chef Mohammad Arif continues to redefine Indian gastronomy in Dubai, setting Little Miss India apart as an essential culinary destination for both tradition and innovation.
