A classic Arabic dessert, Muhallabia, is given a twist with the addition of camel milk and strawberries. The ingredients include 50g of cornflour, 1 litre of Camel milk, 90g of caster sugar, 2 tablespoons each of rosewater and ground pistachios, and strawberries for garnish. The method involves creating a smooth paste from cornflour and milk, which is then combined with the remaining milk and sugar. This mixture is cooked until it thickens, with rosewater added towards the end. Once cooled and set in the refrigerator, it is garnished with pistachios and strawberries before serving.
Camel Milk Caramel Basbousa
This recipe reimagines the traditional Basbousa with the inclusion of camel milk in both the cake and the caramel syrup. The Basbousa requires 215g of coarse semolina, 50g of freshly grated coconut, 100g of sugar, 30g of flour, half a teaspoon of baking powder, a quarter teaspoon of salt, 100g of thick yogurt or crème fraîche, and 100g of unsalted butter, melted and cooled. For added decoration, 16-30 whole almonds are used.
The caramel syrup, a creamy concoction made from 1 liter of camel milk, 175g of demerara sugar, 1.5 teaspoons of vanilla extract, a quarter teaspoon of baking soda, and a half teaspoon of flakey salt, is prepared by gently heating the ingredients until the mixture reduces and caramelizes. This syrup is drizzled over the baked Basbousa, which is prepared by mixing the dry ingredients with yogurt and melted butter, spreading in a pan, and baking until golden brown.
These recipes from Camelicious not only offer a way to indulge in the rich flavors of Arabic desserts but also incorporate the nutritional benefits of camel milk. Whether enjoyed during the cold winter months or as a refreshing summer treat, these desserts are sure to bring a taste of Emirati tradition into any kitchen.
